Caramel Braised Pork with Eggs
(Thit Heo Kho Trung)

1 Kg of Pork belly, sliced into cubes (not too small!) |

1 Cup of water with 7 tablespoons of white sugar |
|
Bring to a boil, and let it reduce |
|
After about 10-15 minutes it starts to become caramel |
|

When it is golden brown and sticky add the pork cubes,
also add 1 choppe donion, and 6 chopped cloves of garlic |
|
Now add coconut water (transparant) untill about a half inch above the meat,
also add 4 spoons of fish sauce, a pinch of salt, about 1 spoon of fresh grinded black peper
and optional a small spoon msg/vet-sin. |

Let it simmer fot about 1 hour on low heat,
(the first half hour with the lid on, after that take the lid off.
after an hour add 4 or 5 peeled hardboiled eggs |

Let it all simmer for about 15-20 minutes and taste the sauce. adjust. |
|
Serve with fresh sticky rice, chopped red onions and fresh Koriander
Optional some picked greens (cuccumber)
This
dish can be pretty fatty if you choose to use pork belly,
so I'd
suggest making this and then refrigerating overnight.
The excess fat
will congeal for easy removal.
Just reheat by letting it simmer for a
few minutes |
