Gỏi cuốn

(Vietnamese 'fresh' rolls)

A gỏi cuốn, summer roll, Vietnamese salad roll, or fresh roll is a vietnamese dish consisting of meat/fish with fresh herbs and vermicelli wrapped in Vietnamese bánh tráng (rice paper). They are served at room temperature, and are not deep fried.

Grill you meat, fish, seafood. you can use anything you like.
chicken, beef, pork, shrimps, scallops. Whatever u like.

Also make sure you use fresh herbs and vegetables,
since you'll eat them raw its very nice if the herbs are superfresh!
I always use Koriander, Thai basil, and Mint. Some cucumber and beansprouts
and chopped onions.

Cook some rice vermicelli/Glass noodles.
Drain them and sprink a little peanut oil on the noodles.

Also prepare some dipping sauce,
i always make two sauces

Sauce 1
(Mix together in a blender, slowly let it boil)

300 Ml water
Juice of 2 lemons
9 tablespoons of fishsauce
7 tablespoons of sugar

6 red chili's
Sauce 2
(dont boil, just mix together)

1 spoon of peanut butter
1 spoon of 'yellow bean sauce' (asian)
a little splash of water and some maggi
3 chopped red chili's
2 tablespoons of sugar
Now mix this all together,
then bruice about a handfull
of unsalted peanuts and mix it in as well
If all the herbs are washed and ready, the noodles are cooked and done, and the meat/fish is grilled
(Note: you can also use as gourmet, and grill the meat in a small grill while eating)
Its time to assemble the rolls and enjoy the food.

Rce paper is used for making fresh spring rolls in Vietnamese cuisine, where the rice paper is called bánh tráng or bánh đa nem. Ingredients of the food rice paper include white rice flour, tapioca flour, salt, and water. The tapioca powder makes the rice paper glutinous and smooth. It is usually sold dried in thin, crisp, translucent round sheets that are wrapped in cellophane. The sheets are dipped briefly in water to soften them, then wrapped around ingredients.
Dip the sheet completely into cold clean water
place it on your plate
Add some rice vermicelli, some meat, some herbs, onion and all you want in your springroll
Now roll the lower end over the filling
Now fold the sides
Now roll it up.
make sure its tightly rolled then dip it in some sauce! yum!
