Pat thai
(thai fried noodles)

Pad Thai or Phat Thai (Thai: ผัดไทย [pʰàt tʰāj], "fried Thai style") is a dish of stir-fried rice noodles with eggs, fish sauce (Thai: น้ำปลา), tamarind juice, red chilli pepper, plus any combination of bean sprouts, shrimp, chicken, or tofu, garnished with crushed peanuts, coriander and lime.
 The dish had been known in ancient Siam in various forms for centuries. The variant of noodle was brought to the ancient Thai capital of Ayuthaya by Vietnamese traders. However, it was first made popular as a national dish by Luang Phibunsongkhram when he was prime minister during the 1930s and 1940s, partly as an element of his campaign for Thai nationalism and centralization, and partly for a campaign to reduce rice consumption in Thailand. The Thai economy at this time was heavily dependent on rice exports; Phibunsongkhram hoped to increase the amount available for export by launching a campaign to educate the poor in the production of rice noodles, as well as in the preparation of these noodles with other ingredients to sell in small cafes and from street carts. Nowadays Pad Thai has become a widespread staple food and is one of Thailand's national dishes..

Soak the noodles for about 1 hour in cold water.
 (Banh pho noodles)
 When you start cooling put a large pan of water on the stove and start to bring to a boil.
Make the pat thai sauce...

Combine:

2 cubes of palm sugar,
 1/4 cup of fish sauce
 3 tablespoons of tamarinde paste
 1 tablespoon of water

(let this simmer on very low heat and keep stir until sugar is dissolved)
Once the sugar is disolved, remove from heat and set aside.
Get your ingredients ready....
 Crushed peanuts, carrot slices, leeks, green onions,
 cut pressed tofu, garlic and chopped challots.
 also get some dried chili and crush/chop them finely. wash beansprouts and set ready too.
Add the garlic and onions in the wok
Add two eggs
Add the tofu.
Add shrimps.
blance the noodles in boiling water for about 2 minutes, drain and add in the wok.
(maybe add some oil again at this stage)
add the chopped chili and the sauce. also add some peanuts and some bean sprouts.
Now add al the rest of the ingredients
Mix it well
Ready to eat!
(add some more peanuts and fresh chopped chili)
